Apple Cinnamon Coffee Cake

I made this coffee cake quite a while ago, but thought I should put it up anyway. It smelled delicious, and my parents loved it!




Apple Cinnamon Coffee Cake Recipe by DAWNOPFER

    1 cup whole wheat pastry flour
    1/2 cup all purpose flour
    1/2 cup splenda for baking
    1+1/2 tsp baking powder
    1+1/2 tsp ground cinnamon
    1/2 tsp salt
    3/4 cup 1% milk
    2 tbs butter, melted
    1 tsp vanilla extract
    1 large egg, lightly beaten
    1 cup diced & peeled granny smith apples (one apple)
    cooking spray
    TOPPING: **NOTE** : I doubled the topping recipe below, and it turned out great!

    1/8 cup splenda brown sugar blend
    1 tbs all-purpose flour
    1 tbs whole wheat pastry flour
    1/2 tsp ground cinnamon
    2 tbs chilled butter, cut into pieces
Preheat oven to 350.
To prepare CAKE:
Put flours, sugar, baking powder, cinnamon, and salt into a bowl. Mix. Make a well in middle of mixture. Add milk, melted butter, vanilla, and egg. Stir until just moistened. Fold in apples. Pour batter into an 8 inch square baking pan that has been greased with cooking spray.
Combine brown sugar, flours, cinnamon, and butter with a pastry cutter or with a fork until crumbly. Sprinkle over top of cake.
Bake 45 minutes, or until toothpick inserted into center comes out clean.
Cool 10 minutes before serving.
Makes 9 3″ pieces.
